Make Ahead Mashed Potatoes

  • 5 lb. potatoes (not Idaho)
  • 1 onion
  • 8 oz. cream cheese
  • 1 c. sour cream
  • salt and pepper

Directions

    Boil potatoes with 1 whole onion until potatoes are done. Discard onion.

    Mash potatoes with cream cheese, sour cream, salt and pepper.

    If dry, add a little milk and 1 beaten egg. Refrigerate in buttered dish.

    Dot with butter on top. Cover while refrigerated.

    Bring to room temperature.

    Bake, uncovered, at 350° for 45 minutes.
