Make Ahead Mashed Potatoes

- 5 lb. potatoes (not Idaho)
- 1 onion
- 8 oz. cream cheese
- 1 c. sour cream
- salt and pepper
Directions

1Boil potatoes with 1 whole onion until potatoes are done. Discard onion.

2Mash potatoes with cream cheese, sour cream, salt and pepper.

3If dry, add a little milk and 1 beaten egg. Refrigerate in buttered dish.

4Dot with butter on top. Cover while refrigerated.

5Bring to room temperature.

6Bake, uncovered, at 350° for 45 minutes.

7Serves 8.
