Make-Ahead Mashed Potatoes

Ingredients
- 5 lb. potatoes
- 4 c. water
- 2 tsp. salt
- 1/2 c. butter or margarine
- 2 (3 oz.) pkg. cream cheese
- 2 Tbsp. chopped chives
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 1/2 to 1 3/4 c. milk
- butter or margarine
- paprika
Directions

1Pare and quarter potatoes.

2Cook potatoes in water with two teaspoons salt until done.

3Drain and return to pot.

4Mash potatoes until smooth.

5Add 1/2 cup butter, cream cheese, chives, 1 teaspoon salt and pepper.

6Gradually add enough milk to make potatoes creamy and fluffy.

7Cover tightly and refrigerate potatoes.

8Can be stored up to one week.

9To serve, spread potatoes in a greased baking dish.

10Dot with butter and sprinkle with paprika.

11Bake at 350° for 45 minutes.
