  • 1 package (24 ounces) frozen shoepeg corn, thawed
  • 1 package (16 ounces) frozen peas, thawed
  • 1 package (16 ounces) frozen French-style green beans, thawed
  • 1 large red onion, chopped
  • 4 celery ribs, thinly sliced
  • 2 medium carrots, thinly sliced
  • 1 medium green pepper, chopped
  • 1 medium sweet red pepper, chopped
  • 1 jar (4-1/2 ounces) sliced mushrooms, drained
  • 1 jar (4 ounces) diced pimientos, drained
  • 1/2 cup sugar
  • 1/2 cup olive oil
  • 1/2 cup red wine vinegar
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper

    In a large bowl, combine the first 10 ingredients. Place remaining ingredients in a jar with a tight-fitting lid; shake well. Pour over vegetable mixture; toss to coat. Refrigerate, covered, 8 hours or overnight, stirring occasionally.
