Ingredients
- 9 tbsp olive oil
- 2 1/4 lb potatoes, peeled, thinly sliced
- 2 lb red peppers, diced
- 1 None large onion, finely diced
- 2 cloves garlic, minced
- 4 sprigs fresh thyme
- 1 tsp paprika
- 1 tsp aniseed
- 1/2 cup dry white wine
- 8 None red mullet or seabass fillets
- 2 tbsp all-purpose flour
- 1/2 bunch fresh parsley, chopped
Directions

1Heat 4 tbsp oil in a large frying pan. Saute potatoes over medium heat, until golden brown. Season then arrange in a baking dish.

2Meanwhile, heat 2 tbsp oil in a pan. Saute peppers, onion and garlic. Season and add thyme, paprika and aniseed. Cook for 5 mins. Add white wine and simmer for 5 mins.

3Preheat oven to 325°F. Lightly coat fish fillets with flour, shaking off excess. Heat remaining oil in a nonstick frying pan. Saute fish for about 2 mins per side. Drain on paper towels. Arrange on top of potatoes then distribute peppers over fish. Bake for 15 mins, or until cooked to your liking. Serve sprinkled with parsley.
