Ingredients
- 1 c. yellow cornmeal
- 1 c. flour
- 4 tsp. baking powder
- salt to taste (1 tsp.)
- 1/4 c. sugar (optional)
- 2 eggs
- 1 c. milk (whole or butter)
- 1/4 c. vegetable oil
Directions

1Mix dry ingredients.

2If you like sweet cornbread, include the sugar (I omit this).

3Add the eggs, milk and vegetable oil to the dry ingredients.

4Use a seasoned black iron skillet for best results.

5Add 2 to 3 tablespoons oil or bacon drippings to pan and place in oven to heat.

6When a drop of water sizzles (pan shouldn't be smoking), remove from oven and add batter.

7Batter should sizzle some as you add it.

8Bake for approximately 25 minutes.

9Remove from oven; turn out onto plate.
