- 1/2 c. butter
- 1 c. jam (any variety)
- 2 c. sifted flour
- 2/3 c. buttermilk
- 1 tsp. soda
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1 c. brown sugar
- 3 eggs, separated
- 1/2 c. raisins
- 1 tsp. allspice
Directions

1Cream butter and gradually add sugar.

2Cream until the mixture is fluffy.

3Add egg yolks and jam to this mixture and beat until well blended.

4Sift flour and measure.

5Take out about 1/2 cup to use to dredge raisins.

6Sift remaining flour with cinnamon, nutmeg and allspice.

7Add soda to buttermilk.

8Add flour mixture alternately with the buttermilk and soda.

9Mix in flavored raisins, and lastly, fold in stiffly beaten egg whites.

10Reserve 2 tablespoons for the filling.

11Divide the remaining batter into two 9-inch cake pans which have been lightly greased in the bottom and wax paper lined.

12Bake at 350° for 35 minutes.
