  • 1 1/2 to 2 c. cornmeal
  • 1 c. cream-style corn
  • 1 c. sour cream or plain yogurt
  • 1/3 c. salad oil
  • 2 jalapeno peppers, chopped fine
  • 1/2 green pepper, chopped fine
  • 2 eggs
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1 c. sharp grated cheese

Directions

    Mix all ingredients except cheese.

    Pour half batter into a well-greased pan.

    Top with half the cheese, then repeat layers. Bake at 350° for 35 to 40 minutes.
