Mandarin Cake

- 4 large eggs
- 3 large whole mandarin oranges (Clementines or tangerines)
- 1 1/8 - 1 1/4 cups ground almonds
- 1 teaspoon baking powder
- 3/4 cup sugar
Directions

1Place mandarins in a saucepan, cover with water and boil for 1 hour.

2Leave to cool.

3On a plate, cut mandarins open, remove pips and place pulp and skins into blender.

4Process until smooth.

5There should be just over a cup of pulp.

6Beat eggs and sugar until thick and fluffy.

7Add mandarin pulp, almonds and baking powder.

8Mix well, and pour into a greased and floured 8 inch cake pan.

9Bake at 375°F for 1 hour.

10Cake will fall slightly in center.
