  • 2 to 3 cups cooked, diced chicken
  • 2 tablespoons plus 2 teaspoons lemon juice
  • 1 cup diced celery
  • 3 tablespoons minced onion
  • 13 cup mayonnaise
  • 1/2 cup toasted slivered almonds
  • 1 11-ounce can mandarin orange slices, drained, plus additional slices for garnish
  • 1 cup seedless grapes
  • Salt and freshly ground black pepper to taste Lettuce

Directions

    Combine chicken, lemon juice, celery, onion and mayonnaise; chill.

    Add almonds, orange sections and grapes; season with salt and pepper.
