Ingredients

  • 1/2 cup almonds sliced
  • 3 tablespoons sugar
  • 1/2 head iceberg lettuce
  • 1/2 head romaine lettuce
  • 1 cup celery chopped
  • 3 each scallions, spring or green onions chopped
  • 1/2 cup vegetable oil
  • 4 tablespoons sugar
  • 1 tablespoon salt and black pepper
  • 4 tablespoons apple cider vinegar
  • 1 tablespoon parsley leaves
  • 11 ounces mandarin oranges 1 can

Directions

    Over medium heat cook sliced almonds and sugar, stirring constantly until almonds are glazed and sugar dissolved.

    Cool.

    Combine torn iceberg and romaine lettuce, chopped celery and green onions.

    Prepare Dressing:

    Mix together all dressing ingredients in small bow.

    Toss oranges, lettuce, almonds and dressing immediately before serving.
