Ingredients

  • 4 c. flour
  • 4 tsp. soda
  • 4 tsp. cinnamon
  • 1 tsp. salt
  • 3 c. sugar
  • 6 eggs
  • 1 c. coconut
  • 3/4 c. oil
  • 2 tsp. vanilla
  • 4 c. diced mangos (4 or 5 ripe mangos)
  • 1 c. raisins
  • 1 c. chopped nuts (Macadamia or other)

Directions

    Mix flour, soda, cinnamon, salt and set aside.

    Beat the eggs while gradually adding the sugar.

    Add the oil and vanilla.

    To the egg mixture, add 1 cup of flour mixture and 1 cup mangos. Repeat until all is blended.

    Add nuts, raisins and coconut. Spoon into 4 loaf pans.

    Bake at 350° for 55 to 60 minutes.
