- 4 pieces Wahoo, Snapper, Or Other Saltwater Fish
- 1/2 sticks Unsalted Butter
- Blackened Seasoning (Cajun Classique Or King Kooker), To Taste
Directions

1Cut fish fillets into palm-sized portions.

2Melt butter in a microwave safe dish.

3Heat a cast iron skillet on medium-high heat (we use the burner on the grill outside, because the butter tends to smoke a lot!).

4While pan is heating, dredge fillets through melted butter.

5Sprinkle as much blackened seasoning as you like on each side.

6(We like a lot, because we like spice.)

7Sear fish for 1 minute (or until crispy) on each side.

8If fillets are thick, place in a deep pan and bake at 350F for 5-10 minutes until done.

11I found the Cajun Classiques seasoning at Publix and the King Kooker Blackened Redfish Seasoning at Bass Pro Shop.

12If you cant find these, any blackening seasoning should do.
