- 1 c. couscous
- 2 tbsp. olive oil
- 1 clove garlic
- 1 mango
- 1 jalapeno
- 1/2 c. raisins
- 1 ripe tomato
- Juice of 1 lime
- 1/4 c. small cilantro sprigs
- 1/4 c. small parsley sprigs
- salt
Directions

1Prepare the couscous according to the package directions.

2Set aside.

3Heat 1 tablespoon of the olive oil in a large saute pan over high heat.

4Add garlic, mango, and jalapeno and saute until the mango begins to color lightly.

5Stir in the remaining tablespoon of olive oil, the couscous, raisins, tomato, lime juice, cilantro, and parsley and toss to heat through.

6Season with salt.

7Serve hot or at room temperature.
