Mango Ginger Lassi

  • 1 cup low-fat plain Kefir
  • 2/3 cup frozen mango chunks (Trader Joe's has them)
  • 1 thin slice fresh ginger root
  • 2 tsp turbinado sugar
  • pinch of cardamom
  • a few unsalted pistachios (optional)

Directions

    Add all ingredients to your blender in the order listed and blend until very smooth. Serve immediately in a tall glass. The pistachios are optional, and can either be blended in or chopped and sprinkled on top.
