Mango Macadamia Bars

  • 1 1/4 cups flour sifted
  • 2/3 cup self-rising flour sifted
  • 2/3 cup macadamia nuts
  • 6 tablespoons butter chopped
  • 1/2 cup sugar
  • 1 large egg
  • 12 ounces sour cream
  • 1 tablespoon brown sugar
  • 2 mangoes stone removed, thinly sliced
  • flaked coconut to serve
  • whipped cream to serve

    Preheat oven to 375°F. Line an 8 x 12 inch baking dish with parchment paper. For the pastry base, place flours, macadamia nuts, butter, sugar and egg in a food processor. Pulse until combined. Using floured fingertips, press dough into dish. Bake 15-20 mins until golden. Cool 10 mins.

    Meanwhile, for the topping, mix sour cream and sugar together in a bowl. Spread evenly on base. Arrange mango slices in a single layer on top. Bake 15-20 mins, until topping is firm. Cool completely in dish. Cut into rectangles, sprinkle with coconut and top with whipped cream, to serve.
