  • 1/2 c. butter or vegetable shortening
  • 3/4 c. sugar
  • 2/3 c. raw mango, cut fine
  • 2 eggs
  • 2 c. sifted flour
  • 1/4 tsp. salt
  • 1 Tbsp. lime juice
  • 1 tsp. soda
  • 1/2 c. chopped nuts

Directions

    Cream shortening, sugar and eggs.

    Stir in dry ingredients, mango and lime juice.

    Mix all together, add nuts.

    Bake in loaf pan at 375° for 1 hour.

    Do not cut until next day for firmness.
