- 3/4 whole Red Onion, Diced
- 3 whole Roma Tomatoes, Diced
- 2 whole Roasted Hatch New Mexican Green Chiles
- 1 whole Large Mango, Diced
- 3 whole Limes, Juiced And Zest
- 1 cup Cilantro, Chopped
Directions

1Slice and dice the onions, cilantro, and tomatoes.

2You can use any tomato.

3I just had romas in the house at the time.

4Peel the mango and dice.

5Zest and juice 3 limes.

6You can use canned chiles, but this is WONDERFUL when you roast New Mexican Hatch chiles (the bestest chile ever).

7Just roast, peel the skin off, and dice seeds and all.

8Mix all together and serve with bbqd chicken, tacos, or homemade tortillas.

9You can eat it cold or saute it to warm it up.
