  • 8 oz. Mozzarella cheese, chopped in 1/2-inch pieces
  • 2 eggs, lightly beaten
  • 1/4 c. parsley, chopped
  • 1/4 tsp. nutmeg (freshly ground)
  • salt
  • pepper (freshly ground)
  • 18 manicotti shells
  • 4 c. tomato paste
  • 5 oz. Parmesan cheese (freshly grated)
