  • 1 lb. ground beef
  • 1/2 c. chopped onions
  • 2 cloves garlic, chopped
  • 4 c. tomato juice
  • 1 (6 oz.) can tomato paste
  • 2 tsp. oregano
  • 1 tsp. sugar
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 3 c. shredded Mozzarella
  • 16 oz. cottage cheese
  • 10 oz. pkg. frozen spinach, thawed
  • 2 eggs
  • 1/8 c. Parmesan
  • 8 oz. manicotti shells, uncooked

Directions

    Brown ground beef, onions and garlic.

    Pour off fat.

    Stir in 2 cups tomato juice, tomato paste, oregano, sugar, salt and pepper. Simmer 20 minutes.
