- 3 eggs, well beaten
- 1/2 c. sugar
- 1 tsp. vanilla
- 1/2 tsp. salt
- 1 c. maple syrup
- 1 Tbsp. butter, melted
- 1 (7 oz.) pkg. coconut
Directions

1Beat eggs slightly with sugar.

2Add vanilla and salt.

3Mix well.

4Pour in syrup and melted butter.

5Blend thoroughly.

6Spread coconut in 9-inch pie shell (unbaked).

7Bake at 425° for 10 minutes.

8Reduce heat to 350°.

9Bake until pie puffs in the middle and a silver knife inserted in the center comes out clean.

10Yields 8 servings.
