Maple-Walnut Fudge

- 3 c. packed brown sugar
- 1 (5 oz.) can evaporated milk (not condensed)
- 1/2 stick butter (soft)
- 1 c. chopped walnuts
- 1 tsp. vanilla extract
- 1 tsp. maple extract
Directions

1Line an 8-inch square baking pan with foil.

2Lightly grease foil.

3In heavy saucepan, combine sugar, butter and milk.

4Bring to a boil over medium heat, stirring constantly.

5Then boil without stirring 3 minutes or if using a candy thermometer registers 235° (soft ball stage).

6Remove from heat and let stand in pan without stirring until warm, 110°.

7Beat in walnuts, vanilla and maple extract until well blended.

8Spread mixture evenly in baking pan.

9Refrigerate at least 8 hours, until very firm.

10Lift foil by ends onto cutting board.

11Cut into 1-inch squares.
