Maple Walnut Pie

- 1/2 c. finely chopped walnuts
- 1/4 c. butter
- 3 Tbsp. packed brown sugar
- 1/2 c. flour
- 2 envelopes unflavored gelatin
- 1 1/2 c. milk
- 1/8 tsp. salt
- 3 eggs, separated
- 3/4 c. maple syrup, divided
- 1 c. heavy cream
Directions

1Preheat oven to 375°.

2In a small bowl, combine walnuts, butter, brown sugar and flour.

3Mix with a pastry blender and press over the bottom and sides of a buttered 9-inch pie plate.

4Prick bottom and bake 10 to 12 minutes.

5Set aside to cool.

6Sprinkle gelatin over milk in a heavy saucepan.

7Add salt.

8Beat egg yolks with 1/2 cup of the syrup and the cream.

9Stir into the milk and gelatin mixture.

10Cook over low heat until mixture thickens slightly, about 5 minutes.

11Chill, stirring occasionally, until it mounds when dropped from a spoon.

12Beat egg whites until stiff, gradually adding maple syrup that remains.

13Beat until very stiff. Fold into gelatin mixture.

14Turn into crust and chill until firm.
