- 24 ounces, weight Frozen Corn
- 4 Tablespoons Butter
- 4 slices Cooked Bacon
- 1/2 cups Onion, Finely Diced
- 1/2 whole Green Pepper, Finely Diced
- 2 whole Jalapenos Diced
- 1/8 cups Garlic, Minced
- 1 can (12 Oz. Can) Diced Tomatoes
- 1/2 cups Green Onions, diced
- 1/2 Tablespoons Thyme
- 1 teaspoon Kosher Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Cayenne
Directions

1Melt the butter in a sauce pan. Cook bacon separately and allow to cool. Add corn, onions, peppers, and salt to the melted butter. Reduce the heat to medium.

2Cook, stirring often, for about 15 minutes or until the vegetables are tender.

3Add garlic, tomatoes, green onions, thyme, salt, pepper, and cayenne to your taste.

4Cook for another 15 minutes, stirring occasionally.
