  • 4 large eggs
  • 1 quart water
  • 1/3 cup loose leaf tea
  • 1 quart water
  • 3 star anise
  • 1/4 tsp ground cinnamon
  • 2 tsp brown sugar packed
  • 1/4 tsp ground ginger
  • 1/2 tsp chives, chopped

Directions

    In a small pot gently put you eggs in it, then cover with water.

    Bring to boil.

    From the time of boiling let it boil 10 minutes.

    Take to sink let cold water run into pot cooling it down.

    In a pot add water, tea, star anise,sugar, cinnamon, ginger, and chives bring it to simmer.

    When eggs are cool to touch, take the back of a spoon and gently hit eggs.

    Causing small cracks in shell leave the shell on and put into tea.

    Simmer for 45 minutes.

    Then let cool.

    Peel and serve.
