  • 5 lb. new red potatoes
  • 1 lb. bacon
  • 8 oz. Velveeta cheese
  • 12 oz. mayonnaise
  • 1 onion, diced

Directions

    Fry bacon and crumble.

    Saute onion in 3 tablespoons of bacon drippings.

    Boil potatoes with skin on and cut into chunks.

    Cube Velveeta.

    Mix all in a large bowl with mayonnaise.

    Bake in a 9 x 13-inch casserole, uncovered, at 350° for 20 minutes or until cheese melts.
