- 3 Tbsp. flour
- dash of pepper
- 3/4 tsp. salt
- 1/2 medium onion
- 1 2/3 c. evaporated milk
- 1 1/2 c. shredded Cheddar cheese
- 2 Tbsp. grated Parmesan cheese
- 1 1/3 c. Minute rice
- 1/2 tsp. oregano
- 1 1/3 c. water
- 1 can tomatoes
- 1/4 c. melted oleo
- 1 Tbsp. chopped parsley
- 1 can tuna fish, drained
- dash of paprika
Directions

1Stir flour, pepper and 1/4 teaspoon salt into melted oleo in saucepan.

2Mix until smooth.

3Gradually add evaporated milk. Stirring constantly over medium heat, cook and stir until sauce is thickened.

4Then add cheese and stir until cheese melts.

5Place Minute rice, parsley, oregano, water and the remaining salt.

6Stir to moisten all rice.

7Place 2/3 of tomatoes.

8Top with onion and tuna fish. Spread on cheese sauce.

9Garnish with remaining tomato. Sprinkle with paprika.

10Bake at 375° for 15 to 20 minutes.
