- 5 lb. boneless rolled roast, sirloin tip or rump
- 1/2 c. butter, divided
- 3/4 c. light dry cooking sherry or dry vermouth
- 1 large onion, sliced (more if sweet)
- 2 Tbsp. Worcestershire sauce
- juice of 1/2 lemon
- 1/2 tsp. salt
- 8 oz. sliced mushrooms, drained
- 3 beef bouillon cubes in 1 1/2 c. water (use mushroom juice, then rest of water)
Directions

1Brown meat in 1/4 cup butter.

2Bake beef at 325° uncovered for 2 hours.

3Pour sherry over meat and bake 1 hour more.

4Remove meat from oven; cool and slice, saving juice.
