Marinated Carrots

Ingredients

  • 2 cans sliced carrots
  • 1 large onion, sliced into rings
  • 1 large bell pepper, sliced into rings
  • 1 can tomato soup
  • 1 tsp. mustard
  • 1 tsp. Worcestershire sauce
  • 1/2 c. oil
  • 1 c. sugar
  • 3/4 c. vinegar

Directions

    Drain carrots and pour into big bowl.

    Place onion and pepper rings on top.

    In saucepan over medium heat combine rest of ingredients.

    Stir with wire whisk until all ingredients are well dissolved and warmed.

    Pour over vegetables and toss lightly to cover all vegetables.

    Cover and marinate overnight.

    You can add more carrots as needed to marinate.

    Keeps a week or so.
