Marinated Carrots

Ingredients

  • 1 lb. carrots, sliced
  • 10 3/4 oz. can tomato soup
  • 1/2 c. Crisco oil
  • 1/4 c. sugar
  • 1/4 c. cider vinegar
  • 1/2 c. diced green peppers
  • 1/2 c. diced onions
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. yellow mustard
  • 1 tsp. salt

Directions

    Cook sliced carrots until tender-crisp.

    Bring to a boil the tomato soup, oil, sugar, vinegar, onion, green pepper, Worcestershire sauce, mustard and salt.

    Remove from heat and pour over drained and cooled carrots.

    Let marinate at least 2 days before serving.

    Will keep two weeks in refrigerator.
