Marinated Carrots

Ingredients

  • 2 lb. carrots, peeled and sliced
  • 1 can tomato soup, undiluted
  • 1/2 c. sugar
  • 1/2 c. vinegar
  • 1/2 c. oil
  • 1 or 2 Tbsp. chopped onion
  • 1 or 2 Tbsp. diced green pepper

Directions

    Cook carrots for 5 minutes, then drain and cool.

    Mix other ingredients in a bowl.

    Add carrots.

    Chill to blend flavors. Serve over salad greens.
