  • 8 to 10 medium carrots, cut into strips
  • 1/4 c. salad oil
  • 1 1/2 Tbsp. vinegar
  • 1 Tbsp. chopped green pepper
  • 1/2 tsp. dry mustard
  • 1 tsp. paprika
  • 1 small clove garlic, minced
  • 1 Tbsp. chopped green onion or instant onion
  • 1/8 tsp. pepper
  • 1 tsp. salt
  • 1/2 tsp. basil
  • 1 Tbsp. lemon juice

    Cook carrots in 1-inch boiling water for 5 minutes; drain. Combine the rest of the ingredients; mix well and pour over the carrots. Refrigerate for 1 hour or overnight and serve cold.
