Ingredients
- 1 lb. carrots
- 3 Tbsp. oil
- 3 garlic cloves, minced
- 1 to 2 Tbsp. chopped onions or 2 tsp. dried minced
- 1 1/2 tsp. salt
- 1/2 tsp. dry mustard
- 1/8 tsp. pepper
- 1/4 c. vinegar
- 1 Tbsp. whole pickling spice, tied in cheesecloth
- 1 onion, thinly sliced
Directions

1Cut carrots into strips.

2Mix garlic and minced onions in oil. Saute carrots in mixture for 5 minutes.

3Stir in salt, pepper, mustard and vinegar.

4Simmer 5 minutes.

5Remove pickling spices and put carrots and juice in shallow dish.

6Cover with thinly sliced onions.

7Baste carrots for added flavor while they chill.

8For pickle flavor, don't tie spices in cheesecloth.

9You can leave spice bag in carrots until cool and squeeze to get full flavor.
