Marinated Chevre (Goat Cheese)

Ingredients

  • 1 log goat or sheep's milk cheese (available at local farm or health food stores)
  • 1/4 to 1/3 c. best quality olive oil
  • assorted dried and fresh herbs (I use dill, rosemary, coriander and basil) to taste
  • pink peppercorns (optional, but very pretty)
  • freshly ground pepper

Directions

    Place goat cheese (Chevre) on a plate.

    Sprinkle dried or fresh herbs on top.

    Pour olive oil over cheese and let marinate for at least 1 hour.

    Serve with good quality crackers or French bread.
