Marinated Chevre (Goat Cheese)

- 1 log goat or sheep's milk cheese (available at local farm or health food stores)
- 1/4 to 1/3 c. best quality olive oil
- assorted dried and fresh herbs (I use dill, rosemary, coriander and basil) to taste
- pink peppercorns (optional, but very pretty)
- freshly ground pepper
Directions

1Place goat cheese (Chevre) on a plate.

2Sprinkle dried or fresh herbs on top.

3Pour olive oil over cheese and let marinate for at least 1 hour.

4Serve with good quality crackers or French bread.
