  • 5 large deboned, skinned chicken breasts, halved
  • 2 1/2 c. fresh lemon juice (about 10 lemons)
  • 1 c. flour
  • 1 Tbsp. sweet paprika
  • 1 c. canned chicken broth
  • 2 1/2 Tbsp. brown sugar
  • 1 lemon, thinly sliced
  • 1 Tbsp. herbes de Provence
  • salt and freshly ground pepper

    One day before serving, place chicken in a shallow dish.

    Pour lemon juice over chicken and marinate overnight, turning pieces occasionally.

    Preheat oven to 375°.

    Remove chicken from lemon juice; reserve juice.

    Combine flour, paprika, salt and pepper to taste.

    Dredge the chicken with seasoned flour and place in shallow baking pan.

    Bake chicken for 40 minutes at 375°.
