Marinated Corn Salad

  • 6 medium ears fresh corn
  • 3/4 c. chopped celery
  • 1/2 c. chopped green bell pepper
  • 1/2 c. red kidney beans, drained
  • 1/2 c. chopped onion
  • 2 oz. jar pimento, drained
  • 1/2 c. each: vegetable oil and white vinegar
  • salt and pepper

Directions

    Remove husks from corn and cook in boiling water for 10 minutes or microwave until done.

    Cut corn from cobs.

    Combine corn and next 5 ingredients.

    Set aside. Combine oil, vinegar, salt and pepper.

    Bring to boil and pour over vegetables.

    Cover and chill 8 hours.
