Marinated Cucumber Salad

Ingredients

  • 5 large cucumbers
  • 2 medium onions, sliced
  • 1 c. water
  • 1 c. white vinegar
  • 1/4 c. sugar
  • 1 Tbsp. salt
  • 1/8 tsp. pepper

    One day head:

    With tines of fork, score cucumbers lengthwise, then cut crosswise into thin slices.

    Slice onions thinly and separate into rings.

    In large bowl (do not use aluminum bowl), combine water, vinegar, sugar, salt and pepper.

    Whisk until sugar is dissolved.

    Stir in cucumbers and onion rings.

    Cover and marinate salad in refrigerator for at least 5 hours.

    Makes 8 servings.

    I place a breakfast plate on top of vegetables to keep them under the marinade.
