Marinated Cucumber Salad

- 5 large cucumbers
- 2 medium onions, sliced
- 1 c. water
- 1 c. white vinegar
- 1/4 c. sugar
- 1 Tbsp. salt
- 1/8 tsp. pepper
Directions

1One day head:

2With tines of fork, score cucumbers lengthwise, then cut crosswise into thin slices.

3Slice onions thinly and separate into rings.

4In large bowl (do not use aluminum bowl), combine water, vinegar, sugar, salt and pepper.

5Whisk until sugar is dissolved.

6Stir in cucumbers and onion rings.

7Cover and marinate salad in refrigerator for at least 5 hours.

8Makes 8 servings.

9I place a breakfast plate on top of vegetables to keep them under the marinade.
