- 1 (20 oz.) can garbanzos, drained
- 1/2 c. oil
- 3 Tbsp. vinegar or juice of 1 lemon
- 1/2 c. chopped parsley
- 1/4 c. chopped scallions
- garlic powder or 2 cloves fresh garlic, minced
- 1/4 tsp. black pepper
Directions

1Combine all ingredients and allow to marinate in refrigerator at least 2 hours.

2Drain.

3Serve with toast rounds, or as part of an antipasto tray.

4Yields 2 1/2 cups.
