  • 1 (20 oz.) can garbanzos, drained
  • 1/2 c. oil
  • 3 Tbsp. vinegar or juice of 1 lemon
  • 1/2 c. chopped parsley
  • 1/4 c. chopped scallions
  • garlic powder or 2 cloves fresh garlic, minced
  • 1/4 tsp. black pepper

    Combine all ingredients and allow to marinate in refrigerator at least 2 hours.

    Serve with toast rounds, or as part of an antipasto tray.
