Marinated Lamb Chops

Ingredients
- 1 small onion, sliced
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 2 teaspoons minced fresh rosemary or 3/4 teaspoon dried rosemary, crushed
- 2 teaspoons Dijon mustard
- 1 garlic clove, minced
- 1/2 teaspoon pepper
- 1/4 teaspoon salt
- 1/4 teaspoon ground ginger
- 8 lamb loin chops (3 ounces each)
Directions

1In a shallow dish, combine the first 10 ingredients; add lamb chops and turn to coat. Cover and refrigerate for several hours or overnight.

2Drain and discard marinade and onion. Lightly oil the grill rack.

3Grill chops, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°).
