Marinated Mushrooms

Ingredients

  • 2 lb. mushrooms
  • 2 cans artichoke hearts, drained
  • 3/4 cup water
  • 1/4 cup olive oil
  • 1 clove garlic, chopped
  • 1/4 tsp peppercorns
  • 1/4 tsp ground thyme
  • 1/4 cup cider vinegar
  • 2 Tbsp salt
  • 1/4 tsp dried basil
  • 1 Tbsp bay leaf
  • 1/4 cup lemon juice

Directions

    Slice mushrooms in half through stems. Quarter artichoke hearts and combine with mushrooms.

    Combine remaining ingredients and heat, but do not boil. Pour over mushrooms and artichoke hearts. Refrigerate overnight. Remove peppercorns and bay leaf before serving.
