- 1 1/2 pounds fresh mushrooms
- 1/4 cup finely chopped celery
- 2 cloves garlic, minced
- 1/4 cup butter or margarine, melted
- 1/4 cup water
- 1 cup vinegar
- 1 cup olive oil
- 1/4 cup lemon juice
- 2 tablespoons chopped fresh parsley
- 2 bay leaves
- 1 teaspoon coarsely ground black pepper
- 1/4 teaspoon dried whole oregano
Directions

1Clean mushrooms with damp paper towels. Combine mushrooms, celery, garlic, butter, and water in a large skillet; bring to a boil. Reduce heat; cover and simmer 5 minutes. Add remaining ingredients, stirring well. Cover and simmer 3 minutes. Let cool. Marinate in refrigerator several hours or overnight. Remove mushrooms from marinade before serving.
