- 34 cup salad oil
- 13 cup red wine vinegar
- 1 12 teaspoons salt
- 34 teaspoon sugar
- 12 teaspoon basil
- 2 green peppers, thinly sliced
- 2 onions, thinly sliced
- 6 peppercorns
- 1 bay leaf
- 1 garlic clove, quartered
- 1 12 lbs medium fresh mushrooms, cleaned
Directions

1In medium saucepan, over medium heat, boil all ingredients except mushrooms.

2Cover and simmer over low heat for 10 minutes.

3Stir in mushrooms until coated.

4Simmer an additional 10 minutes.

5Do not overcook.

6Cool and refrigerate for 2-3 days.

7Drain off some the marinade before serving, retaining green peppers and onions.
