- 1 lb. small, fresh mushrooms
- 1/2 tsp. salt
- 1/4 tsp. freshly ground pepper
- 1 tsp. oregano
- 1/3 c. wine vinegar
- 1 c. olive or vegetable oil
Directions

1Trim the ends from the stems of the mushrooms.

2Wash them quickly; dry immediately and cut each mushroom in half.

3Mix salt, pepper, oregano, wine vinegar and oil together.

4Add the mushrooms and toss until all the pieces are well coated.

5Let stand at room temperature for 4 hours.

6Serve with picks as a cocktail accompaniment or as a relish.
