Marinated Mushrooms

Ingredients
- 1/2 lb. firm mushrooms
- 3/4 c. virgin olive oil
- 2 or 3 garlic cloves, peeled and crushed
- 2 Tbsp. coarsely chopped fresh parsley
- salt to taste
Directions

1Wash and wipe mushrooms with paper towel and place in a glass bowl.

2Combine olive oil, garlic and parsley and pour over mushrooms.

3Marinate in the refrigerator for 48 hours (in the same bowl), stirring occasionally.

4Add salt when marinated.

5Put in a covered jar.

6The mushrooms will keep for about 2 weeks.
