Marinated Pork

  • 1/4 c. minced fresh spearmint
  • 1 Tbsp. peeled, grated ginger root
  • 2 cloves garlic, minced
  • 1/3 c. molasses
  • 3 Tbsp. soy sauce
  • 3 Tbsp. hoisin sauce
  • 2 Tbsp. water
  • 2 (1 lb.) pork tenderloins (trim fat)

Directions

    Combine first 7 ingredients in a small bowl and stir well. Place tenderloins in large flat nonmetal dish.

    Pour mixture over tenderloins, turning to coat.

    Cover and marinate in refrigerator at least 8 hours, turning occasionally.

    Remove tenderloins, reserving marinade.

    Coat grill rack with cooking spray.

    Place on grill over medium-hot grill.

    Insert a meat thermometer to thickest part.

    Cook 20 minutes on each side or until thermometer registers 160°.

    Baste often with marinade.
