Ingredients

  • 1 bunch fresh broccoli
  • 1 head cauliflower
  • 1 lb. fresh mushrooms, sliced
  • 1 pt. cherry tomatoes, halved
  • 2 (6 oz.) cans pitted black olives, drained and sliced
  • 2 (8 oz.) cans water chestnuts, drained and sliced
  • 1 red onion, thinly sliced
  • 2 (0.7 oz.) pkg. dry Italian salad dressing mix
  • 1/3 c. red wine vinegar
  • 1/4 c. water
  • 1 1/3 c. vegetable oil

Directions

    Separate broccoli and cauliflower into florets.

    In a large bowl, combine broccoli and cauliflower florets with mushrooms, tomatoes, olives, water chestnuts and onion.

    Prepare dressing mix according to package directions using wine vinegar, water and oil. Pour dressing over vegetables.

    Cover and marinate at least 8 hours.

    Toss well before serving.
