Marinated Shrimp

Ingredients

  • 2 1/2 lb. shrimp
  • 1/2 c. celery tops
  • 3 1/2 tsp. salt
  • 1/4 c. mixed pickling spices
  • 1 pt. sliced onions
  • 7 or 8 bay leaves
  • 1 1/4 c. salad oil
  • 3/4 c. white vinegar
  • 2 1/2 tsp. salt
  • 2 1/2 Tbsp. capers (with juice)
  • dash of Tabasco sauce

Directions

    Boil shrimp in enough water to cover. Add celery tops, salt and spices. Cook 10 to 12 minutes. Drain shrimp and cool with cold water.

    Peel under cold running water.

    Alternate shrimp and sliced onions in shallow dish.

    Combine remaining ingredients and pour over shrimp and onions.

    Keep in refrigerator at least 24 hours before serving.
