- 1 bunch broccoli, cut into flowerets
- 2 medium zucchini, cut lengthwise and sliced
- 1 lb. mushrooms, stems removed and sliced thick
- 2 bell peppers, cut julienne
- 1 c. white or wine vinegar
- 1 c. vegetable oil
- 1/2 c. fresh lemon juice
- 3 cloves garlic, minced
- 2 tsp. granulated sugar
- 1 tsp. salt
- 1 tsp. pepper
Directions

1Combine vegetables in a large bowl.

2Combine remaining ingredients in a jar.

3Cover and shake vigorously.

4Pour mixture over vegetables.

5Cover and refrigerate overnight, stirring occasionally.
