Ingredients

  • 2 c. dried navy beans
  • 1 c. dried red beans
  • 1 1/2 c. garbanzo beans
  • 3 (10 oz.) cans chicken broth
  • 3 2/3 c. water
  • 2 onions
  • 1 c. carrots
  • 1 c. celery, chopped
  • 1 large garlic, minced
  • 2 Tbsp. parsley flakes
  • 2 tsp. basil
  • 1 tsp. oregano
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 3 c. spinach, chopped

Directions

    Sort and wash beans.

    Put in pot and cover with water.

    Let soak for 8 hours; drain and add chicken broth, onion, carrots, celery, garlic, parsley, basil, oregano, salt, pepper and spinach. Bring to a boil; cover and simmer 2 hours or until beans are tender.
