Marron Chestnut Pudding with Agar

- 150 grams Chestnut Paste
- 400 ml Milk
- 50 grams Raw cane sugar
- 2 tsp Agar
- 1 dash Almond extract
- 1 splash Rum
- 1 Maple syrup
Directions

1Before anything else, mix the raw cane sugar and agar together well and leave to one side.

2(Adjust the amount of sugar depending on the sweetness of the chestnut paste that you are using.)

3Add the milk to a pan along with the mixture from Step 1, mix well and put on the heat.

4Be careful that the mixture doesn't boil over and stir on a low heat.

5Allow the mixture to boil a little.

6Stop the heat and mix in the chestnut paste thoroughly.

7Add in the almond essence and rum.

8Pour the mixture evenly into containers and once cooled, chill and set in the refrigerator.

9Serve with maple syrup if you like to finish.
