Marshmallow Cherry Bars

Ingredients

  • 3/4 c. margarine
  • 1/3 c. brown sugar
  • 1 1/2 c. flour
  • 2 envelopes unflavored gelatin
  • 1/2 c. cold water
  • 2 c. sugar
  • 1 (8 oz.) jar cherries, chopped
  • 1/2 c. chopped almonds
  • 3 drops red food coloring
  • 1/2 tsp. almond extract
  • 1/2 c. cherry juice and water

    Combine margarine, brown sugar and flour and press in ungreased pan.

    Bake in 325° oven for 30 minutes; cool.

    Soften gelatin in water.

    Combine white sugar and juice drained from cherries and water to make 1/2 cup.

    Bring to a boil and boil for 2 minutes.

    Remove and stir in softened gelatin.

    Beat at medium speed until very stiff, about 20 minutes.

    (Mixture climbs beaters as it thickens.)

    Fold in cherries, nuts, food coloring and almond extract.

    Spread on top of baked crust.

    Let stand at room temperature until it sets.
